As a nutritious and easy-to-store food ingredient, banana powder has been widely used in food processing, baby food, nutritional supplements and other fields in recent years. The main components of bananas include sugar, starch, dietary fiber, vitamins, etc. After processing and conversion into banana powder, it can not only extend the shelf life but also retain most of its nutrients. Next, we will introduce in detail how is banana powder manufactured.
1. Banana peeling
Banana peeling is the first step in banana powder production. First, the bananas are screened to ensure that they are green but not damaged. When peeling, the factory usually uses mechanized peeling equipment to separate the banana skin from the banana, and the peeled banana will enter the next step of processing.
2. Slicing
The peeled bananas need to be sliced into uniform thin slices. This step is critical for the subsequent drying process, because the thin slices have a larger surface area, which helps the water evaporate quickly and improves the drying efficiency. The thickness of the slices is usually between 3-5 mm, which can ensure uniform drying and avoid nutrient loss caused by over-drying.
3. Blanching
Blanching is to prevent enzymatic reactions in sliced bananas, delay oxidation and discoloration, and thus maintain the color and nutrients of bananas. Blanching is generally done by quickly placing sliced bananas in hot water at 85-95°C for 1-2 minutes. After blanching, the banana slices need to be cooled quickly, which can be done by rinsing with cold water or using a rapid cooling device. The blanched banana slices have a natural color and a good taste, which also helps to maintain quality stability during the subsequent drying process.
4. Drying
Drying is a crucial step in the production of banana powder. After blanching, banana slice contain a certain amount of moisture, which needs to be removed by drying for long-term storage. Drying usually uses hot air circulation drying equipment, with the temperature controlled between 50-70°C. The drying time is generally 6-12 hours, depending on the thickness and humidity of the banana slice.
5. Grinding
The final step is to grind the dried banana slice. This process uses a crusher or grinding equipment to grind the banana slice into a fine powder.
The ground banana powder can be packaged through packaging equipment and then sold directly.
